I can't wait to get my hands on a Reindeer!

STUFFED RIB ROAST OF REINDEER

One 6 pound rib roast of Reindeer, boned
1/2 cup chopped suet
4 cups cranberries, chopped
One and half cups of sugar
2 cups dry bread crumbs
1 small onion, chopped
1 teaspoon of salt
1/4 teaspoon of pepper
1/2 teaspoon marjoram (optional)
4 tablespoons fat

1. wash meat well, drain and pat dry
2. In a heavy fry pan,cook suet until crisp, add chopped cranberries and sugar and cook. Stir until berries are clear
3. Add bread crumbs, onion, and seasonings to cranberry and suet mixture and mix well
4. Spread stuffing on meat, roll up like a jelly roll and tie with string.
5. Spread fat over roast, place in roaster, and roast in oven at 325 F until done. (about 20-25 minutes per pound)
 
That does sound like a good recipe, yum!

We always have venison in some form at our christmas table, today it will be a leg of phacochoerus africanus sundevallii, or the southern warthog.
